Description

Chipotle Black Bean Soup is a warming bowl that is loaded with spicy flavor. It’s a one-pot vegan soup recipe that includes canned ingredients, along with a few fresh components. This 30 minute dinner is an easy weeknight meal that the whole family will love!


Ingredients

Always opt for organic ingredients.

  • 1 tsp avocado oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 (15-oz) cans black beans
  • 2 cups low-sodium vegetable broth
  • 1 tsp chipotle chili powder
  • 2 tsp ground cumin 
  • 1 tbsp cacao powder
  • Sea salt & black pepper, to taste

Optional Servings:

  • Cauliflower rice
  • Avocado
  • Fresh cilantro

Instructions

  1. Sauté the Onion & Garlic. In a large pot, heat the avocado oil on medium-high heat. Add the chopped onion and minced garlic and let cook for 2 – 3 minutes.
  2. Stir in the Spices. Add in the spices and cook for 2 – 3 more minutes. If the pot is drying out, add a splash of water.
  3. Add Beans & Broth. Add the beans and broth. Bring to a light boil, string everything together.
  4. Cook. Reduce the heat to medium-low and let cook for 15 minutes uncovered, stirring every so often.
  5. Blend. For extra-thick soup, pulse with an immersion blender the pot a couple times. You can also remove a few scoops of soup, and add it to a high-speed blender. Blend until smooth then pour back into the pot and mix together.
  6. Serve. Serve over a bed of cauliflower rice, along with some diced avocado, fresh cilantro, or whatever you like. Enjoy!


Notes

Organic Beans: I used organic black beans for this soup recipe, but I think organic pinto beans would work!

Organic Vegetables: Use your favorite type of onion – red, yellow, or white!

Blending Soup: Although this step is completely optional, I highly recommend it. Blending about a third of the soup takes this spicy black bean soup to the next level. It creates the perfect amount of thickness and heartiness!  

Organic Chipotle Powder: If spicy is not your thing, simply reduce the organic chipotle powder or replace it with regular organic chili powder

Organic Toppings: Don’t forget them! Top with your favorites. I love cooked cauliflower rice, chilled diced avocado, and fresh cilantro!

Storage & Reheating. Transfer soup to an air-tight glass container in the refrigerator for up to 5 days.  For longer storage, you can store it in the freezer, in a freezer-safe glass container for up to 2 months. If freezing, make sure to thaw in the fridge overnight before reheating. To reheat, simply transfer the soup to a large pot on the stovetop over medium heat, adding a little extra water or broth as needed until warm. Alternatively, place in a microwave-safe bowl to reheat in the microwave.
