Description

This Roasted Chickpea & Cauliflower Salad with Honey Mustard Vinaigrette is a flavorful recipe that is full of healthy ingredients. Massaged greens, fresh veggies, crispy chickpeas, cauliflower florets, and creamy avocado, all get drizzled with a sweet honey dijon vinaigrette. It’s the ultimate recipe to please all!


Ingredients

Always opt for organic ingredients.

ROASTED CHICKPEAS & CAULIFLOWER

  • 1 (15-oz) can chickpeas, drained
  • 2 tsp avocado oil 
  • 1 tsp ground cumin
  • 1 tsp smoked paprika 
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Sea salt & black pepper, to taste

GREENS 

  • 3 cups greens of choice, chopped
  • Sea salt, pinch

HONEY DIJON VINAIGRETTE 

  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tbsp manuka honey
  • 2 tsp dijon mustard
  • 2 garlic cloves, minced
  • Sea salt & black pepper, to taste

VEGETABLES

  • ½ English cucumber, sliced thinly
  • 1 cup cherry tomatoes, halved
  • ½ cup pitted green olives, halved
  • 1 large avocado, sliced
  • Fresh herbs, chopped

Instructions

  1. Roasted Chickpeas & Cauliflower. Preheat the oven to 425 degrees F. On a baking sheet, combine the drained chickpeas, cauliflower, avocado oil, & spices. Toss well to evenly coat. Transfer to the oven and roast for 20 – 25 minutes, flipping halfway.
  2. Greens. Add greens to a large mixing bowl along with the sea salt and massage with clean hands for 1 – 2 minutes to soften the greens. Set aside.
  3. Honey Dijon Vinaigrette. Add all of the ingredients to a bowl and whisk until fully combined.
  4. Assemble. Divide the massaged greens between serving bowls. Top the chickpeas, cauliflower, veggies, and avocado. Drizzle with the vinaigrette and garnish with fresh herbs, if desired. Enjoy!

Notes

Baking: Be sure to flip the chickpeas & cauliflower halfway, as this ensures even baking. 

Organic Vegetables: Feel free to customize your preferred vegetables.

Manuka Honey: If you don’t have manuka honey, you can substitute it with pure maple syrup.

Storing & Reheating: Transfer ingredients to separate air-tight glass containers and refrigerator for up to 4 days. To reheat, preheat the oven to 350 degrees F. Transfer the chickpeas & cauliflower to an oven-safe bowl. Place in the oven for about 10 – 15 minutes, until warmed through. To serve, pair with the greens, veggies, and dressing.
