Description

This Spicy Peanut Butter Noodles recipe is easy to make & is ready in 20 minutes or less. Pair your favorite vegetables with noodles, then toss it all in a spicy homemade peanut sauce. Best of all, it’s a vegan meal that is packed with flavor!


Ingredients

Noodles

  • 8oz brown rice noodles
  • 2 green onions, chopped
  • 1 carrot, shredded
  • 1/4 cup red cabbage, shredded
  • 1 garlic clove, minced
  • Sesame seeds to top

Spicy Peanut Butter Sauce

  • 2 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp lime juice
  • 1/41/2 tsp red chili flakes
  • 1 garlic clove, minced
  • 2 tbsp water

Instructions

  1. Bring a large pot of water to a boil and cook noodles according to package instructions.
  2. Meanwhile, mix the creamy peanut butter, soy sauce, maple syrup, red chili flakes, minced garlic, and water together in a small bowl.
  3. Heat a splash of water in a non-stick skillet on medium-high heat. Add minced garlic, red cabbage, and carrots. Sauté for 2-3 minutes.
  4. Next, drain the cooked noodles and add to the cooked veggies. Mix together and add the peanut butter sauce, stirring everything together in the skillet.
  5. Divide between 2 bowls.
  6. Garnish with additional green onions, red cabbage, and a sprinkle of sesame seeds, if desired. Enjoy!

Notes

  • Depending on the brand and type of peanut butter you use, you may need to add a bit more water to the sauce to help incorporate the peanut butter. Creamy peanut butter works best.
  • Always taste and adjust the sauce if needed. Depending on how accurately you measure the noodles, you may need a bit more or less sauce.
  • Don’t overcook the noodles! Make sure the noodles are still slightly hard in the center before mixing them into the sauce.
  • Add any veggies you love to this recipe! Just sautee your veggies in the pot with the garlic and then continue with the recipe.
