Description

This creamy Vegan One Pot Pasta recipe is nutrient-dense and ready in 30 minutes. An assortment of sautéed vegetables and red lentil pasta get coated in a rich cashew tomato sauce. It’s a healthy vegan pasta recipe that will quickly become part of your weekly dinner rotation!

PASTA

  • 1 red onion, chopped
  • 2 cups button mushrooms, sliced
  • 1 small zucchini, sliced into half moons
  • 2 carrots, chopped
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • 8 oz. lentil rotini pasta

CASHEW CREAM TOMATO SAUCE

  • 1 (14.5-oz) can diced tomatoes
  • ½ cup raw cashews, soaked in hot water for 10 minutes
  • ½ cup filtered water

Instructions

  1. Sauté. In a large pot or dutch oven, heat over medium heat, sauté the onion, mushrooms, carrots, and zucchini, for 5 minutes. Add the minced garlic and seasonings. Cook for 2 minutes.

  2. Cashew Cream Tomato Sauce. Incorporate all the sauce ingredients to a high speed blender and blend until smooth.

  3. Boil & Simmer. Stir in the uncooked pasta, sauce, and broth. Bring to a boil, then reduce heat simmer at a gentle rolling boil for 10 minutes, or until pasta is tender.

  4. Serve. Divide between bowls. Enjoy!


Notes

Organic Noodles: Rotini noodles can be swapped for any kind of pasta noodle that you have on hand!

Protein Noodles: To amplify the protein, I love using pasta that are made with one ingredient – lentil flour. They taste just like the real thing and it’s high in protein!

Organic Tomatoes: Diced, crushed, or tomato sauce all work for the pasta sauce.

Soak Cashews: Be sure to soak your organic raw cashews in hot water for about 10 minutes to soften.

Organic Vegetables: Don’t have the veggies listed on hand? No worries, include what you’ve got. Spinach, broccoli, sliced tomatoes, etc.

Storing & Reheating: Transfer to an air-tight glass container in the refrigerator for up to 4 days. To reheat, simply transfer the pasta to a saucepan on the stovetop over medium heat, adding a little extra filtered water as needed until warm.
